Kyu Katsue

The menu starts with appetisers, tsukuri, grilled items and other dishes and ends with mizutaki hotpot. With the hotpot, the chef prepares the Chinese cabbage, spring onions, chicken, minced meat and other ingredients separately, mixing them together in a nabe at the end so as to treat his customers to the true flavour of chicken dashi. Rather than ponzu, he garnishes it with garlic miso and yuzu pepper, pursuing his own style while observing tradition.
