Sushi Tsubasa

Constructed by the owner-chef together with a tea ceremony house carpenter, the interior of the restaurant is an elegant space. Set menus start with several snacks of which simmered octopus from the Kanmon Straits is standard and continues with creative nigiri featuring spices and citrus flavouring. Prime examples include decoratively sliced squid garnished with uni or flying fish roe and butterflied fugu. The different textures and tastes are impressive.
