The owner-chef trained in Kyo-ryori, which makes the most of the ingredients. The dishes he serves are creative in their novel combinations of ingredients. One example is the steamed awabi with pureed green soybeans and white miso garnished with figs. There are also many menu offerings made with ebi-imo, kamonasu and other Kyoto vegetables. The cod shirako and shogoin kabura surinagashi served as an appetiser is a winter tradition.
