‘Shikan’ is a term from Zen Buddhism and means turning one’s mind to a single thing. It describes the owner-chef’s serious attitude toward cooking. The set menu features the orthodox kaiseki cuisine he learnt in Kyoto. Familiar items here include fragrant goma-dofu and thick-cut duck, but there are plenty of dishes available, as he wants his customers to try various things. The serving dishes include Rosanjin and Suda Seika ceramics.
