The omakase-only set menu expresses what’s in season in northern Kyushu. Ingredients, including fish and meat, are procured directly from local producers and grilled over charcoal. They may appear modern at first, but underpinning all the dishes are the classic techniques of Japanese cuisine. The ‘Drops of Vegetables’ dish served first is a dashi made from vegetable peels and ends out of a desire to make use of every last bit of the ingredients.
