The creative dishes here make use of Karatsu ingredients and are unique in their approach. The focus is on seafood like sea bream in spring and hamo in summer, but Saga beef and wild game like boar and mallard are also used. The chef’s experience with French cuisine is also put to use in the elegant seasoning and precise cooking of the fish and meat. The standard dish is handmade pasta such as tagliolini or ravioli. Only an omakase set menu is served.
